Here it is, the soup that started it all!! Please note several things - I am a terrible speller, I don't ever measure spices so do what you feel your palate can handle, I will always forget one ingredient (sorry), and remember you can always make this your own by adding your favorite veggie to it!!
Harvest Kale and Veggie Soup - Crock pot
1 box veggie broth
1 can diced tomatoes (I used one that also had jalapenos in it, but I am cajun and like it spicy!!)
1 can fire roasted tomatoes diced (salsa style)
1/2 packet of taco seasoning
1 bag frozen corn
1 bag (big) chopped Kale
1/2 bag baby carrots - chopped
1 red onion - diced
olive oil
Spices I used - garlic salt, Tony Chachere's (i put this in EVERYTHING, so stock up! and will from here on out be referred to as Tony's), Italian Seasoning, salt, pepper, cider vinegar (i put that in a lot, dash of sugar
Directions -
In the crock pot add the first 5 items and stir. Heat a small amount of olive oil to a saute pan and add the kale, stir till it is wilted down but still a little crunchy then add to the crock pot. Add a little more olive oil to the pan and add the carrots and red onion, saute till the carrots are tender and the onion has just about caramelized then add to the crock pot. At this point add some water to your saute pan (just enough that will fill the rest of the crock pot up with liquid) and add to the crock pot. Add any of the above mentioned seasonings that you like!! Leave the crock pot on High still it boils stirring and tasting along the way, then turn to low.
TOPPING - I topped my hot soup with a dash of sour cream and a little shredded cheese it was so good with and without it!!
